Espaguetis con Gambas al Ajillo y Champiñones
Whilst garlic prawns and garlic mushrooms would typically be served as tapas-style dishes, it’s so easy to combine them, add some white wine and serve them with spaghetti. This is a very simple dish in which the pasta absorbs the flavour of the other ingredients to produce a delicious main course. You can’t go far wrong when preparing this dish and might like to experiment with it by using alternative types of seafood such as squid or salmon.
Ingredients
Serves 4 people
- 400g spaghetti
- 400g king prawns (peeled)
- 6 cloves garlic, thinly sliced
- 300g mushrooms, sliced
- 250ml white wine
- 4 tablespoons of olive oil
- salt
- freshly ground black pepper
Cooking Method
Put 2 tablespoons of olive oil in a large frying pan and heat it over a medium heat. Once the oil is hot add the thinly sliced garlic and fry until it turns golden. Then add the king prawns, a pinch of salt and fry until they change colour. Once they have changed colour remove the garlic and the prawns and set them aside.
Now add the other 2 tablespoons of olive oil to the frying pan and once it is hot add the sliced mushrooms and a pinch of salt and fry them on a medium heat for about 10 minutes until they are cooked.
Meanwhile cook the spaghetti following the instructions on the packet.
Add the white wine, garlic and prawns to the mushrooms and bring to the boil. Cook for a few minutes and then add salt and freshly ground black pepper to taste.
Now add the cooked spaghetti and mix well.
Serve in bowls.
